Summary

David Wilson was the State dairy expert in Victoria from 1888 and superintended the government's model dairy at the Centennial International Exhibition. He facilitated the transition from making butter by hand to its production in centralised factories and drew up plans and articles of association for co-operative factory companies. Wilson arrived in Victoria in 1854 and initially worked as a dairy farmer in Inverleigh then Springbank. He was an early importer of cream separators, and introduced pasteurisation in the 1890s. Wilson was also a founding member of the Dairymen's Association of Victoria.
