- Abstract
A novel cabinet (world patents pending) for the bacterial decontamination of freshly dressed beef carcasses is described and a laboratory evaluation of it is reported. A low pressure distribution or 'deluge' hot water system is used in contrast to more conventional pressure spraying. Laboratory determined data for destruction of bacteria at the skinned meat surface together with concomitant heat and evaporative losses from the cabinet are presented. Data are summarised in a predictive model to define cabinet operation. A 'standard' cabinet applicable to a wide range of abattoir production rates is recommended and the advantages of such a cabinet are outlined. For a production rate of 135 sides/h predictions indicate that a log10 1 (90%) reduction in bacteria could be achieved at a cost less than 0.016% of the value of the meat. This investigation provides more comprehensive results than previous studies in decontamination. Running cost using the novel cabinet was one-third that of an existing spray cabinet when compared at the maximum reduction of log 1.3 (95%) achieved by the spray cabinet. An overall mean maximum reduction of approximately log 3 (99.9%) was obtained with the laboratory cabinet without permanent damage to meat bloom (= appearance).
