Abstract

The introduction and development of refrigeration has been of significant economic importance to Australia. This has particularly been so in South Australia which, in the first half of this century, was very reliant for its 'health, security and progress' on the production, sale and export of perishable agricultural produce. This paper looks at the establishment and growth of industrial refrigeration in South Australia from its invention and early development in the late 1800s through to present day in the Adelaide metropolitan and surrounding hills area. The focus has been on the technology used and the philosophy adopted in the design and operation of cold stores and ice making plants, set against the contemporary social and economic background. A wealth of engineering and anecdotal information has been discovered which, together with the significant amount of early plant that has survived or is still in use and is of easy access, enables a comprehensive story of the development of the refrigeration industry in South Australia to be told.
